Remove zest from 1 orange and set aside
Squeeze the juice from that orange and set aside
1/4 tsp cumin
1/2 tsp salt
1/4 tsp cayenne pepper
1/2 tsp black pepper (preferably crushed)
1 tsp ground ginger
1/2 tsp onion powder
1 tsp garlic powder
3 tbsp dill dried or fresh chopped
1/2 tsp paprika
1/2 c olive oil
Mix thoroughly in a small bowl
For marinade, add water and stir, then pour into marinade container such as freezer bag, casserole dish, cake pan, etc.
Add the Salmon. The marinade should completely cover the fish. Put in refrigerator overnight.
Cook as desired.
For Rub
Leave out the water and just use the paste mixture with the olive oil and rub on all sides of the fish and cook as desired.
If desired, you can add brown sugar, honey or other sweetener.
